It’s been a while since posting and I will get back through the backlog but in the meantime to celebrate 4 months since surgery I wanted to make a sugar free dessert.
Inspired by one of my surgery buddies who was making apple and oat muffins for breakfast I decided to attempt a sugar free apple crumble for dessert tonight and breakfast tomorrow if it works. (Believe it or not I’m getting fed up of savoury breakfasts).
This recipe is so simple and isn’t a major change from my sugar rich crumbles elsewhere on the blog.
Ingredients
- 4 eating apples
- 2 tbs sugar free syrup (I used fibersyrop which I got from amazon)
- 1 tbs lemon juice
- 2 tsp cinnamon
- 1 tbs plain flour
For the Crumble topping
- 100g rolled oats
- 65g plain flour
- 2 tbs sugar free syrup
- 2 tsp cinnamon
- 60g of butter melted
Method
Preheat oven to 180C / gas mk 6
Core then slice the apples and layer in a baking dish. Add the lemon juice, flour, cinnamon and sugar free syrup to the apples combining till everything is coated
In a bowl mix the oats, flour ,cinnamon, then add the butter and sugar free syrup, combining till you get a crumbly mess.
Sprinkle the topping over the apples and pop in the oven for 40 mins or until crisp on top And the apples soft.
As with all good crumbles the pan looks awful when it’s finished but this tasted divine with no aftertaste as promised but the bottle. Lol
I served it with extra thick cream and hubby had custard. Breakfast the next morning just heated up and had with vanilla yogurt.
