We try and celebrate anything as a rule so I like to make the most of pancake day, as its all about the food!! And this year is special as it’s the first pancake day that I’ve been home in many years as I’ve always commuted to work and its one of the few feast days that doesn’t have a public holiday and is always midweek.
So in celebration of this we started the day with…..
Gorgeous fluffy blue bananaberry pancakes. These are completely the Dazzler’s favourite food and are so simple to make….
Ingredients: 1 egg, 1 banana, 1 mug each of self raising flour, milk, blueberries
Method: Put egg, flour and milk in a bowl and whisk till not lumpy
Stir in blueberries and chopped banana with spoon (not whisk)
Ladle small amounts (i have a small ladle or about 2 tbs) into a hot greased pan
Wen bubbles appear flip over for a minute
Serve in a stack with maple syrup
Heaven!!!
But the day doesn’t end there!! I’m thinking of making my mums savoury pancakes in tribute to Findus, as I’m sure we have all had one or two of their crispy pancakes in our time. It’s is actually one of my secret pleasures and makes an alternative to lasagne when you want something a bit different. It’s really easy to make.
All you need is Pancakes
Ingredients: 150g plain flour, 1 egg, 300ml milk, nob of melted butter
Method: Pour flour into a large mixing jug
Make a well in centre and drop in egg
Gradually mix the egg in with the flour, incorporating more flour as you mix
Add in melted butter and then add in the milk whisking until smooth
Heat fry-light in pan till hot
Pour in a small amount of batter, swirling to pan coated
Wait till edges start to come away then loosen and flip/turn
Serve or store between baking parchment
Once you have perfected these the fillings are up to you but to make my mums savoury pancakes you will also need…
Bolognese sauce- I’m not going to offer a recipe as each has their own or use a jar
Grated Cheese- preferably mature and orange, this is not a moment for mozzarella
Then it’s simply an assembly job…
With a slotted spoon put a blob of bolognese on a pancake – straining off as much liquid as you can
Roll these up like a cannelloni tube
Repeat until you have enough to fill your (lasagne) dish
Pour a ladle full of the remaining liquid into the base of your dish
Fill the dish with pancakes, cannelloni style
Pour the remaining sauce over the pancakes
Sprinkle with cheese
Bake for 20 mins in a hot hot oven
Once cheese has crisped a little it’s ready
Serve with green salad

And to finish the day, Pancakes- With cherry sauce and ice cream (in tribute to the Little Chef) of course we won’t be quite so stingy with the pancakes, or the ice cream, or for that matter the cherry sauce but you get the idea!!!!!
