My super fast lemon pepper chicken & med veg salad

Lots of my Flabulous friends do what I used to do, throwing out lots of excuses when it comes to eating healthier. Excuses like… “I haven’t got the time”, “its too much effort!”, “its easier to order in or throw a ready meal into the oven”.

One of my problems has been that healthy food can get boring! I’ve got a great line in delicious soups which make me feel good and taste great, but you can only eat so much soup. And salad can get really samey, and lets face it, bean chilli can only be done so many times!!

Someone asked for a quick, protein rich, low carb meal today and I was reminded of my super fast, super healthy, delicious quick supper recipe…

For the chicken
1 skinless Chicken breast per person cut into bitesize cubes (or a pack of breast fillets)
Juice and zest of 1 lemon (only zest if you can be bothered- i often cant)
Squeeze of garlic in a tube or 2 crushed garlic
Lots of freshly ground black pepper
Pinch of Your favourite herbs (I use parsley and thyme)
Pinch of Sea salt

For the salad
1 red onion
1 red pepper
1 courgette
Bag of salad leaves
Tomatoes
Goats cheese
Balsamic

Method
Put all of the chicken ingredients into a ziplock bag and shake bag around till coated, if you can do this 30 mins in advance leave in fridge to marinade, but works well just if given a good massage in the bag.
Get the griddle nice and hot
Chop up the veg into bitesize pieces
Griddle chicken and veg till chicken is nicely charred (about 15 mins)
When all cooked add whole mess into salad leaves and tomatoes
Toss with a slug of balsamic and tear in goats cheese

Top Tips
M&S do a fab frozen mixed Mediterranean veg pack that makes things way easier!!
You can also take whole breasts and flatten them out and marinade serving on top of the salad
Our favourite bag of leaves for this has to be watercress, spinach and rocket salad but that’s just us!!
