Yes you heard me right- Cupcakes Dammit!!

Ahhh but they will be Flabulous sugar free creations that will help us all live longer without our sugar cravings killing us, I hear you cry!!

OH HELL NO!!!

You see today is my Flabulous Nephew, Rufus’s, 3rd birthday and I have made his birthday cake since he was born. I thought I was off the hook this year because his mum is tackling an octopus shaped sponge cake, she’s a braver man than me!! But I got subtle hints from my mum that there would be lots of people there and maybe I should make another one.

Now there is no way Im turning up to My family with a rival cake, it would be rude and look silly so I thought cupcakes would work much better and be easier to make. So why am I making them now? Well it’s been a tough old week at work and the party isn’t till tomorrow so I get to have Friday night culinary therapy!!

I’ve gone for two types of cupcake. A carrot cupcake and chocolate fudge ones (I always make fudge cake!! It just so happened I had enough ingredients to make a dozen of each so it’s a win win in my book.

For the carrot cakesI stole the recipe from the Good Food Show. The full recipe can be found here I just wasn’t confident that my recipe would translate to cupcakes so we shall see how they go. This one also doesn’t have nuts or other fruits in, which will please purists!! ( I couldn’t resist adding in some cranberries and sultanas as little treats (what? It’s fruit!!!) which makes these practically 2 of your five a day.

I’ve been blessed with a big one…food mixer that is….so making up the batches wasn’t a drag, just throw it all in and mix till it does!! Although I hand mixed the carrots and fruit.

For the fudge cupcakes I actually used my fudge cake recipe from which I’ve made these two wonders in the past…

Bessie, as I’m calling my kenwood is double useful as she comes with a great set of bowls 😉 so a quick change over and we blasted through the fudge recipe in minutes.

So, along with the Dazzler, my faithful tester, we are having a Flabulous Friday night in- baking, wrapping and prepping for the fun fest that will be our weekend….
