Raspberry & chocolate brioche pudding

I saw this recipe on come dine with me and just had to try it (well the Dazzler just kept staring at me until I tried to make it). I had no idea where to get the recipe as it was an old episode so last night I raided google and my larder and made a best guess here.  Im not sure if its right but by god it tasted flabulous.

Ingredients

  • 1 pack of chocolate chip brioche rolls
  • 1 punnet raspberries
  • 1 pack white chocolate buttons
  • 4 medium eggs
  • 750ml whole milk
  • 30g caster sugar
  • Icing sugar for dusting

Method

Get things started in a greased ovenproof dish…

  • Slice your brioche rolls in half lengthways and lay one layer in your dish slightly on top of each other
  • Evenly distribute (or bung) your raspberries and white choc buttons over the layer of brioche
  • Lay your remaining brioche over the top and you should have created something that resembles the below…

Meanwhile in a large measuring jug…

  • Whisk the milk, caster sugar and eggs until fully mixed
  • Pour this over the brioche (it seems like a lot of liquid but it goes)
  • Leave in the fridge for 20 minutes until everything is fully chilled and resembles this…

Lets get cooking…

  • While its in the fridge heat your oven to 190/ 170 fan/ gas mark 5
  • Pop the pudding in the oven and cook for 30 minutes – keep an eye on it and if the top starts to brown pop some tinfoil on it till its finished cooking
  • Allow to cool for 20mins before dusting with icing sugar and serving
