I had the most fantastic bank holiday weekend up in London!!!
Not only did I stay up all night TWO nights in a row, but I got to reconnect with an old friend, act like a teenager and revisit one of my old stomping grounds….the Vauxhall Tavern which, thanks to the Flabulous Amy Lamé and her Duckie crew, was an entertaining experience!!
I’d forgotten nightbuses in London, Camden at 2am and surreal caberet. I’d also conveniently forgotten the price of drinks in London!! Sunday and Monday were spent catching up, drinking, eating takeout and recovering!! We even did shifts in the bed….it was one of THOSE weekends and it was Flabulous!!!
We got home to an enthusiastic welcome from the dogs, you would have thought we left them for years not 2 nights, and some past their best apples!! I was just about to throw them out, prepping for today’s sainsburys delivery (sooo grown up compared to last time I went to the tavern!) when I thought about making apple sauce (I hate waste) as I knew this could be used instead of sugar in some recipes.
Into my heavy bottom pan I poured a small amount of water, my cored & chopped (not peeled) apples and boiled for 20 mins. then I mashed and hand blended the mix, added a teaspoon of cinnamon and was just about to jar it up when I spotted a blinking recipe box in the corner of the screen…applesauce cake!!
So, small ingredient check later and here we are….
2 cups plain flour
1 cup sugar (I used soft brown)
1 tsp salt
2 tsp baking powder
1 tsp cinnamon
1/2 tsp ground nutmeg
1 cup walnuts
1 cup raisins
1/2 cup melted butter (I used flora cuisine as its already pourable and better for my lickle ticker!!)
2 cups applesauce
Heat oven to gas mark 4
Mix all dry ingredients in a bowl
Add in walnuts and raisins
Add melted butter and cooled apple sauce and beat till mixed
Pour into a loaf tin
Bake for 40-50 mins
Cool on rack drizzle with a little icing sugar mixed with apple juice and serve!!
So far so good, it looks lovely and smells heavenly!!
