Yesterday we helped my brother and sister in law move into their new home. When we were celebrating my SIL’s flabulous mother Glenda, asked if whipping up a batch of shortbread was easy
Fast forward 12 hours and I’m proving the point AND Making hubby a last minute valentines treat. I literally cannot tell you how easy these are to make – even when worse for wear, and with only 3 (Max 4) ingredients should be everyone’s go to biscuit recipe.
Ingredients
Either 200g plain flour OR 150g plain flour and 50g semolina
100g butter
50g caster sugar
Method
Sift the flour, and semolina if using, into a bowl. Stir in the sugar and rub the butter in until the whole mixture comes together.
Roll or press out the dough out thickly (about 2 pound coins deep) on your worksurface (this won’t need flour if your work surface is laminate or marble )
With either a pastry cutter or glass cut out rounds (or get clever with a knife and cut out hearts!)
Pop these onto a baking tray lined with paper then with a fork pop 3 lines of fork marks into the centre
Preheat the oven to 320F/160C/Gas 6. Bake the shortbread for 12–15 minutes or until golden
Pop out of the oven then sprinkle with more caster sugar whilst warm, allow to cool then watch them disappear
