There are times when only something sweet will do, and one of those times is today, as I’m hungover and the Dazzler isn’t feeling fantastic.
I’ve already got the bread rising so thought I’d use the heating up the oven time to make cookies and had a root around in cupboards to use up some leftovers and realised I had loads of odds and ends leftover from christmas cake/ pudding making.
With a bit of tweaking I came up with the my walnut and mixed fruit cookies….
Ingredients
85 g butter
70 g dark muscovado sugar
35g caster sugar (I used stevia for this to reduce sugar)
1 egg, beaten
115 g self-raising flour
50g medium oatmeal
50g chopped walnuts
150g mixed dried fruit (I used raisins, currants, sour cherries & chopped apricot
Method
Preheat the oven to gas mark 4. combine the sugars and butter together, then beat in the egg. Add the flour, then mix before adding oatmeal, walnuts and mixed fruit.
Drop heaped teaspoonfuls of the batter onto greased baking sheets, leaving enough space around each cookie to allow it to spread during baking. I made about 14 cookies with the above amounts
Bake for 10–15 minutes (or until golden brown). Cool on baking sheets, then transfer to a wire rack and leave to cool completely.
